Remarks: Dragon fruit adds color and an exotic spice to any produce department. The fruit is sweet when served ripe, but has a very bland flavor. Perfect for fruit plates and garnishes when your customers are looking for something unique. Mass production the past few years has made this fruit as affordable as grapes.
Displaying: Dragon fruit are normally shipped in styrofoam or clear plastic sleeves; this prevents their green offshoots from drying out and turning black. A very finicky fruit, it develops moldy spots as it ripens which make their appearance very ugly; dummy displays to minimize shrink. The flesh turns a translucent greyish color when ripe. Sampling may slow sales. Cull moldy, blackening, wrinkled fruit, bag up and discount or throw out as required.
Receiving: Fruit should be firm, a vibrant pink color and free of defects. Wrinkled green shoots and moldy spots are signs of age. Check stem bowls for insect infestation. Condensation in the plastic sleeves is an indication of age or sitting out too long at room temperature, pulp temperature the flesh. Fruit deteriorates quickly, reject fruit showing these symptoms (mold, wrinkling or softness).
